I cleaned a steelhead and the flesh was as white as a walleye filet. Is there anything wrong with the fish? Fought like a steelhead and looked healthy, although it had a well defined kype already.

The flesh of rainbow trout is white, pink or orange. When the meat is cooked, it has a delicate flake and the color pales. Trout feed can contain pigments to produce desired flesh colors. The fillets need to be firm, resilient and have a fresh appearance.

Looks like the Steelhead you caught with the well defined kype and beat up tail fin had been in the river and returned to the lake.  Not sure if it's diet or lack of food but I think the fish in the river are stressed and start feeding on their own reserves. Steelhead can go months without eating when in the rivers and fish that return to the lake usually have light colored meat. I doubt there is anything wrong with eating them but I don't so I wouldn't know about the flavor.

Sounds like a fish that's returned from spawning in a river.  In my experience the flavor suffers when they're still white fleshed.
