medium size lakers are very good smoked but prep and technique must be correct. I brine mine 1quart 1 big soup spoon salt overnight then dry and leave it cool for 8 hours- smoking at temperatures just before it starts dripping oil about 140-150 but depends on smoker. Done in 3 hours depending on taste keep it longer. Excellent fish- i keep couple a season and put a piece or two with other fish if i smoke.

Personally, I'd rather have a grilled laker than a grilled salmon and grilled salmon is pretty darned good. Nothing but Lawrey's Salt and fresh pepper. Don't over cook, but I do cook it a bit longer than salmon.

You ever deep fry lake trout nuggets Mike? I have done it a few times with small lakers, pretty darn good. I was rather shocked.

I've certainly fried lakers. I'll fry anything other than jello! It's good. Some people don't fry salmon because they "aren't supposed to." Heck, I've fried fresh tuna and it's pretty darned good.

I was at a fish fry a week ago and they asked me to bring nuggets of Salmon for them to deep fry. I said okay (I am working down last years freezer stock anyways), it was really good. They did it with a Cajun breading so a little spice too - I try not to do too much fried food but I am sure a few more salmon will get the fryer.

The recipe my family has used and loved for years for Lakers is;
Grill or Bake
Put the fillet on a piece of foil, cover with Ranch or Creamy Italian Dressing, sprinkle some Mozzarella over the fillet, crush a couple hands full of your favorite chips over the top. fold the foil over the top and cook for 20-25min. Enjoy, works well for Salmon too.
