I have a few core recipes I like to do perch in, here is one of them. Its simple, light, and tastes great.

2 cup all-purpose flour
1.5 tablespoons paprika
1/2 tablespoon salt
2 tablespoon white pepper
½ tablespoon black pepper
1/2 tablespoon cayenne (1-2 tbsp for spicy)

Soak in Milk for 15 mins, this helps breading to stick. You can egg wash if you prefer a thicker breading but I prefer it to be as thin as possible.
Dust / Shake in breading mix, and drop in fryer.
Deep fry at 325 for 3-4 minutes. Use canola or peanut oil
Boatless!

I bought a bag of freshly ground corn meal in southern Indiana and I'm going to use a recipe very close to yours with the corn meal.
Can't wait, I have the walleye for my fish fry just need to get some perch if the north winds will give me a break when I can go lol.

Another option Mccormicks Golden Diplet Fish'n Chips. You will find this by the fresh fish counter at the supermarkets. I just add water and and mix in batter mix. I make the coating thin, you can make it thick by adding less water. Drop your fish in and pull filet out with a fork letting the excess drip off and then deep fry. When I moved up her from central Ohio you could not buy this in Northwest Indiana until about 20 years ago.
